Chocolate Oatmeal Cookies
(No Bake)
2 cups Sugar
3 cups Oatmeal (1 min)
1/2 cup milk
1 tsp. vanilla
1 1/2 cup Oleo Margarine
1/2 cup Peanut Butter
3 Tbls. Cocoa
Cook sugar, oleo, milk and cocoa in saucepan over medium heat. Bring to boil. Cook 1 minute. Remove from heat. Add peanut butter and stir until blended. Add vanilla and oatmeal. Drop from spoon onto waxed paper makes 2 dozen.
Sugarless Apple Pie
4 Apples - Peeled, cored and sliced
8 oz frozen apple juice concentrate (unsweetened)
2 Tbls. Cornstarch
1 tsp. Cinnamon
1/4 tsp. Nutmeg
1/4 tsp Cloves
1 tsp Vanilla
Mix cornstarch with spices and enough juice to blend. Add remaining juice and pour mixture over apples and cook in medium saucepan until apples are tender. Pour into unbaked pie shell. If desired use crumb topping (below). Bake for 30-45 minuites at 350 degrees.
Crumb Topping
3/4 cup Flour
1 Stick low-cal margarine
8 Pkgs. Splenda Sweetner (optional)
Mix Flour and margarine (margarine must be cold) until crumbly. Sprinkle on top of pie and bake. Note: The Splenda Sweetner works best if added after baking.
